On the 17th of January we were honoured to have Katrín Jakobsdóttir the prime minister of Iceland for a visit at hotel Fljótshlíð, Smáratún farm. She was interested in the measures we have taken to fight food waste in our restaurant and she received an introduction about the matter. The fact of the matter is that we have been measuring how much organic waste there is in our kitchen in the end of each day since 2016. After we had done the benchmarking we were able to set ourselves goal for 2017 about reducing food waste in our restaurant. We thought that it would be realistic to be able to reduce it by 25% but in fact we reduced food waste by 57% in the first year of the project! After that we set ourselves a new goal for 2018 and our goal was 25% again. We just got the results for 2018 and it was exactly 25% less waste than 2017. Now we have set ourselves the goal to reduce food waste by 10% for 2019. We thank the prime minister for her visit and her interest in the very important subject of reducing food waste.
